I went searching for good interviews on recording dialogue for animation, and the first thing to come up was a 2005 article I’ve seen a number of times, featuring an interview with the original Family Guy production mixer (since it returned to the air after cancellation), Dan Cubert.

Some of what we do has evolved past what was originally established here, understandably, but almost all of the equipment is still in place and the recording techniques are pretty much identical. So, yeah… this is how we do it.
Besides this I didn’t find much of anything else. On the internet in 2011, I found that a little surprising.
Our mics: Neumann TLM 193. Great sound, a little vocal presence bump, high 140dB SPL.
